Alioli Recipe


Alioli is a lovely garlicky mayonnaise add a touch of optional saffron for a really special flavour. Use with chicken, rice or fish with or without the saffron.

It can be used as a normal mayonnaise or a delightful dip.


Alioli

2 garlic cloves
sea salt
lemon juice, just a squeeze
2 egg yolks
250 ml olive oil
250 ml sunflower oil
30 strands saffron (optional)

Method

Put the garlic cloves in a mortar and crush it well with the sea salt until smooth then add a squeeze of lemon juice.

When really smooth add the oils very gradually, one drop of olive oil and one drop of sunflower oil at a time, whisking well and constantly.

When the mixture begins to thicken nicely add the saffron water(if using) that has been infused in 1/2 tbsp of boiling water for 10 minutes.

Season to taste and add more lemon juice if wanted.
