Spanish Apple Cake

Spanish Apple Cake or Bizchocho de Manzana is a Spanish equivalent of a sponge cake made with olive oil and in this recipe yoghurt.

It's not as light and airy as a Victoria Sandwich cake but very more-ish nevertheless.

Use the yoghurt pot to measure the other ingredients.

Bizcocho de Manzana

Ingredients

1 small pot natural yoghurt
1 yoghurt pot olive oil
1 yoghurt pot demerara sugar
3 yoghurt pots flour
1 sachet baking powder
1 tsp butter
3 eggs
2 apples
Cream to pipe for decoration (optional)

Put into a mixing bowl the yogurt, oil, flour and sugar. In a seperate bowl beat the eggs and add them to the dry ingredients mix. Add the baking powder and using a mixer or blender mix well.

Add the thinly sliced apples, pour into a greased and floured dish or tin and put into a preheated 200c oven, then lower it to 180c and leave to cook for 40 to 45 mins.

Leave to cool and serve decorated with piped cream.
