Braised Artichokes

Braised Artichokes with Dill

6 medium-sized globe artichokes
juice half a lemon
150ml extra virgin olive oil
1 large onion
2 cloves garlic
20g dill salt,pepper


Method

Prepare the artichokes by cutting off the top and the stalk and snapping back the outer leaves until you come to the soft light green tender bit.

Put the olive oil in a heavy based pan and cook the thinly sliced onion until soft. Add the artichoke hearts, cover the pan and cook for 5 minutes then add 100ml water,lemon juice, half the dill and seasoning and cook for another 6-8 minutes until the artichokes are tender.

Add the remaining dill and serve.
