Andalucia Cooking Dishes
These traditional Andalucia cooking dishes or cazuelas are made from low-fired terracotta clay. They are glazed on the inside so liquid can't seep through the clay and are unglazed on the outside.

They can be seen in use everywhere, the small sizes make great individual tapas dishes while the large sizes can be used from frying onions to serving.
I use mine on the gas ring, in the microwave, in the oven and at times straight onto the table as a serving dish, they also go in the dishwasher!
They come in various sizes and round, oval and oblong in shape but they are never very deep, a maximum of about 75 cm.
Cazuelas are very versatile and give off a slow steady heat, which means a longer cooking time than a normal frying pan.
